Pumpkin Roll

I am back… God has healed me and I am able to enjoy life again woohoo! This Thanksgiving is going to be extra special with all that I have to be thankful for. I thank all of you that have been praying for me ,words can’t express how thankful I am for you! ¬† Today I thought I would update the pumpkin roll recipe. We are making a couple of pumpkin rolls for friends that provide service for us over the year. For the past few years I have been trying to convert my mom to using parchment paper instead of wax paper for baking the pumpkin roll on, well today was the day that we tried it and what do you know it worked like a dream! Our pumpkin roll recipe is perfect for Thanksgiving dessert, elegant but no fuss. Let me know your Thanksgiving traditions, one of my family’s is to bake pumpkin rolls for people who have provided us with excellent service through out the year. Pumpkin Roll has been a family tradition at Thanksgiving time for as long as I can ¬†remember. My mom was given the recipe many years ago at a Woman’s Event at ¬†church, over the years we have changed the recipe and made it our own. I ¬†remember when I was about 5 years old and living in Florida, we were having a ¬†garage sale and my mom set out a plate of her Pumpkin Roll to give samples. At the ¬†garage sale a Restaurant owner ate a bite of the pumpkin roll and was immediately ¬†in love with it! He asked her to bake several rolls for his restaurants, after that the ¬†word was out! My mom and I made countless pumpkin rolls for restaurants and ¬†friends, my mom turned her pumpkin roll into a business. We had the business for about two years. Now that I am older and love to cook I have taken over the making of the pumpkin roll, I now carry on the tradition ever year.

Moms Pumpkin Roll

1 cup flour

1/2 tsp cinnamon

1 tsp baking soda

3 eggs

2/3 cup pumpkin puree

1/2 cup sugar

Preheat oven to 375. Mix flour, cinnamon, and baking soda then set aside. In another bowl mix remaining ingredients until smooth. Add in flour mixture half at a time slowly in pumpkin mixture. After all of the ingredients are mixed together and smooth, pour the batter onto a jelly pan/ large cookie sheet lined with parchment paper. Make sure the parchment paper is hanging over the pan so that when it is done cooking you can hold onto the paper to take it out of the pan. Place the batter into the preset oven for 10-15 minutes, while the batter is in the oven prepare a piece of wax paper on the counter with powdered sugar dusted onto it. Once the cake is done in the oven pull the cake out of the pan and turn it out on to the piece of wax paper you have on the counter. Quickly pull the cake off of the parchment paper you cooked it on. Once the cake is off the parchment paper you cooked it on roll the cake onto it self with the wax paper dusted with powdered sugar let it cool. Once the cake is cooled go ahead and make the filling for the pumpkin roll.

Filling for Pumpkin Roll

3 TBS butter, softened

8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract’

Cream the softened butter and cream cheese with a mixer. Once the butter and cream cheese are smooth slowly add in the powdered sugar in small increments. After you have added all of the powdered sugar into the cream cheese and butter mixture and it is smooth add in the vanilla. Spread the cream cheese filling into the cooled pumpkin roll, make sure the filling is evenly distributed through out the pumpkin roll. After you have spread the filling, reroll the pumpkin roll in a new piece of wax paper, tape the ends of the wax paper onto it self so that the Pumpkin Roll is completely covered. Enjoy the Pumpkin Roll out of the fridge.

Supermoon and Baby Sea Turtles

Well I was going to post a food recipe today but instead I thought I would share my exciting evening that I had last night. We went to the beach to see the Supermoon. We also wanted to see the beginning of the Perseid Meteor Shower, though we did not see any meteors we saw something even rarer, we watched as 54 baby Sea Turtles Hatched. We watched the moon until about 9:30 and decided to go home, we drove down the beach road one more time as we left. We saw people out on the beach with red lights and wondered if perhaps the turtles were hatching. Dad went down to see and sure enough they were, he ran back up to get us. We got to the nest in enough time to see several hatch then we went down with the turtle volunteers to the edge of the sand where the sand meets the water. Before we could let the baby turtles go we had to cover any crab holes so that the crabs would not come out and try to eat the turtles. Once we were sure the coast was safe the head volunteer placed ten turtles at a time onto the sand so they could crawl towards the ocean. She even let me release ten turtles, I was amazed at how strong their little fins were. I think I checked an item off my bucket list even though I never even thought I would have the chance to release baby sea turtles. It is a event that is not seen by very many people and we were so blessed to be a part of it. Thankfully all 54 turtles from last night made it safely into the ocean. The rest of the nest should hatch over the next few days. Between seeing the Supermoon and the baby turtles hatch I was in awe of God’s wonderful creation and it brought to mind the verse I have posted below.

Make sure the wax paper is hanging over the pan so that when it is done cooking you can hold onto the wax paper to take it out of the pan. Place the batter into the preset oven for 15 minutes, while the batter is in the oven prepare another piece of wax paper on the counter with powdered sugar dusted onto it. Once the cake is done in the oven pull the cake out of the pan and turn it out on to the piece of wax paper you have on the counter. Quickly pull the cake off of the wax paper you cooked it on, if the cake starts to stick to the wax paper when you are peeling it off use a serrated knife to pull the cake off of the wax paper. Once the cake is off the wax paper you cooked it on roll the cake onto it self with the wax paper dusted with powdered sugar let it cool. Once the cake is cooled go ahead and make the filling for the pumpkin roll.

Throw Back Thursday

Welcome to my very first Throw Back Thursday!

#TBT with Grandma

I thought I would kick this party off with a throw back to my Great Grandma and I at Christmas time.  Great Grandma absolutely loved Christmas she always made it so special and memorable!

Every year when we lived in Florida my family would travel back to Ohio to visit family the week of Thanksgiving. As a child growing up in Florida the thought of snow was always a wonderful one, every year for a month before we would go back to Ohio I would pray for snow. Most years we would get a small amount of snow while we were there, but this particular year was a bit different.

We had went to visit my Great Grandma up in Cleveland Heights. Grandma lived in a small flat with her son, Uncle David. I always loved visiting her, her little flat was always cozy and warmly decorated with Christmas and full of love! From when I was a small child whenever we were together you would find me right next to Grandma.

After a full day of celebrating with family we checked the weather before we headed back to where we were staying, the weather report said there was going to be a blizzard but of course my Dad thought we could make it back to his parents house before the storm hit. We said our goodbyes to Grandma and Uncle David and headed out to brave the snow.

I of course loved the snow, I thought my what a adventure! ¬†I loved feeling the snowflakes on my face! We drove maybe a mile up the road, the roads were a mess! Ice underneath all of the snow. The blizzard was coming much faster then expected! There was a big hill we had to go up and our Florida car would not do it, my Dad tried and tried with no avail. We decided that it would be best to turn around and go back to Grandma’s Flat. ¬†Grandma welcomed us back with open arms. Since we had not planned on spending the night we had no pajamas, nothing! Grandma gave me one of her sweaters to sleep in as well as leg warmers, which I still have packed away in a box! It was quite the adventure, I got to sleep on the couch then the next morning Grandma made us warm oatmeal for breakfast, then we played checkers and grandma always let me win, such warm wonderful memories were made that I will cherish! We checked the weather the next morning, they had worked all through the night to clear the roads. ¬†We in turn headed back to my Dad’s parents house.

Grandma has passed on now and she is rejoicing in Heaven with Grandpa and many others who have gone on before us.  We miss  her tremendously but we know that one day we will see her again and this thought I hold in my heart.  I am very Thankful for the time I did get to spend with her, these are memories I will cherish in my heart forever!
